Mitsuharu 'Micha' Tsumura has built the most fully realised expression of Nikkei cuisine — the fusion of Japanese technique and Peruvian ingredients that is one of the world's most distinctive culinary traditions.
Mitsuharu Tsumura is the son of Japanese immigrants to Peru. He trained at the Tsuji Culinary Institute in Japan before returning to Lima, where he opened Maido in 2009 in the Miraflores district. The restaurant has ranked in The World's 50 Best Restaurants continuously, reaching No.1 in 2025 after sitting at No.5 the previous year. The tasting menu explores Nikkei cuisine, a tradition developed by Japanese immigrants to Peru over more than a century, with combinations that can seem improbable and taste inevitable: ceviche made with Japanese technique, causa with nori, Amazonian fish prepared as nigiri.
