Enrique Olvera opened Pujol in 2000 in Mexico City's Polanco neighbourhood, a few blocks from the Bosque de Chapultepec. He had trained at The Culinary Institute of America and returned to Mexico with a question: what would Mexican cuisine look like if treated with the same seriousness as French or Japanese cooking? The answer, developed over 25 years, is Pujol. The restaurant's most celebrated dish is the mole madre, a mole that has been continuously alive for years, renewed daily, its depth accumulating over time. The tasting menu moves through Mexico's diversity of ingredients and techniques, from the central markets of the capital to the coasts and the jungle.
